I dunno, I've never had them with the shells on (or in France, now I come to think of it), only cooked individually in one of those frying pan thingies.
I know that you can buy empty coquille st-jacques shells for when you want to pretend that your frozen shellfish was fresh off the beach that morning. Perhaps there's a market in second-hand snail shells too.
